Boiled potatoes go great with lots of dishes, and are delicious and easy to prepare. They go especially well with entrées like sausage and corned beef.
All you do is peel the potatoes and cut them into bite-sized chunks. Cover them with lightly salted water in a saucepan and bring them to a boil. After 15 or 20 minutes, test them with the point of a knife or a sharp fork to see when the centers get tender. Check often, because if they boil too long you’ll wind up with smashed potatoes instead. (Which you go ahead and serve, as if you intended it that way.)
When they are tender but still firm, drain the water out and add about one pat of butter per serving. Also add salt and white pepper and parsley flakes. If you wish to add a little more color, sprinkle with some paprika. Toss gently to coat, and keep warm until serving time.
For a different and delicious taste, try putting some steak or roast trimmings in the water with the potatoes as they cook.
