San Diego Cheese Steak Sandwich

Yes, I know the Philly Cheese Steak Sandwich is delicious, and is a well-deserved classic unto itself. But one evening when I had a leftover baguette and some deli roast beef, I made up this similar sandwich.
We had some large sweet onions from CostCo that were so mild you could almost eat them like an apple. So, since everyone here loves raw onion if it’s not too strong, I decided to leave the onion raw. And the jalapeño cheese really makes it a Southwest treat!
INGREDIENTS
1 French baguette, cut in four pieces, and sliced through lengthwise
16 ounces (or more) thinly sliced deli roast beef
1 jar jalapeño cheese dip
1 sweet onion, sliced
butter
mayonnaise
INSTRUCTIONS
Butter the bread and toast it on a griddle or in a dry frying pan. Assemble the sandwich by spreading mayo on the toasted bread, layering meat on one side and onion and cheese dip on the other.
In the photo, the sandwich is served with potato salad and a simple garnish of sliced avocado and onion. This light summer dinner was a huge hit, so we try to remember to repeat it every few weeks!
