Tuna Salad

Tuna salad is delicious either as a salad or as a sandwich. Use this recipe for both, and then modify it to your own taste if you want to.
I normally purchase canned tuna. There are several brands and several varieties of tuna available. Regardless of the brand name, I suggest you look for Albacore, the whitest and mildest of the tuna family. It’s usually available packed in water and oil, and I normally choose the water packed variety. Albacore is not the cheapest tuna, however.
INGREDIENTS
1 can Albacore tuna
1/4 cup mayonnaise
1 celery stalk, chopped
1 tablespoon chopped onion, or 1 teaspoon onion powder
1 tablespoon sweet pickle relish, or 1 medium sweet pickle, chopped
1 teaspoon Dijon mustard
1 tablespoon chopped parsley, dried or fresh
lemon juice —ย a squeeze from a lemon wedge will do (catch the seeds)
salt and pepper
paprika for garnish
INSTRUCTIONS
Mix all the ingredients in a bowl, and let sit for a few minutes for the flavors to blend. Taste it and add salt and pepper to your taste. Either serve over lettuce as a salad or on bread or toast as a sandwich. I like to add tomato and lettuce to my tuna sandwiches.
Other ingredients you can consider, other than modifying those shown above, include chopped pepperoncini peppers, chopped jalapeno pepper, chopped green olives, chopped black or Kalamata olives, garlic salt, and cayenne or Tabasco pepper. You can also get a slightly different taste by substituting lime for the lemon.
