Dorf Salad

When Mary Ann made this salad for us, I at first thought it was a Waldorf Salad. But it has pecans instead of walnuts (and we like pecans better, anyway), and it didn’t have grapes in it. Well, we were out of grapes. But she put in apple slices and carrot pieces and wound up with a great salad. So we called it Dorf salad because the walnuts were missing. It’s also a funnier name.
For four people, core and slice two apples, and peel and cut one or two carrots into pieces, depending on the size of the carrots. You’ll need a handful of pecan halves or pieces, and some chopped onion.
Toss this all together with some lettuce and fresh parsley if you’ve got it, and dress it with your favorite dressing. We like Cesar, Ranch, and Blue Cheese, and it’s good with any of these.
Sprinkle with grated Parmesan and enjoy! The apple and carrot give it a nice crunch and flavor.
