Of course there are dozens of Mexican breakfasts, and probably many more. But here is my favorite quick Mexican breakfast. Quick meaning you have leftover refried beans and pre-cooked bacon on hand. Or you can microwave raw bacon wrapped in paper towels for about 1 1/2 minutes per side, depending on your microwave’s power.

So here’s a great one-skillet breakfast fit for a king. Or at least a caballero.

Drizzle a little oil in a corner of the skillet and put the beans there to warm. After they get going, tear a couple of pre-cooked (or microwaved) bacon strips beside the beans, and make a little puddle of oil and butter to heat up for the egg.

Break the egg into the hot oil/butter, and let it sit for a minute or two until it starts to set up. Meanwhile, turn the beans over with a spatula. It might also be time to remove the bacon to some paper towels before it gets to done.

Turn the egg over for another minute and plate the food. Sprinkle the egg with salt and pepper, or Hot Salt, or Tabasco, or taco sauce. If you have it, sprinkle some grated cheese over the beans. After this great breakfast, you can handle whatever the day brings!
