Lamb

Lamb Chops

To me, lamb is the most elegant meat, and is always a special occasion. It is eaten much more commonly, however, in the Middle East, and many great lamb recipes come from there.

The U.S. produces a significant amount of lamb, but not enough to fill the demand. Excellent lamb is imported from other countries, particularly New Zealand.

The most common cuts for cooking include rib roasts, chops, legs, and cubes for kabobs and stew.
