Easy Cheesy Potatoes

I found this recipe in the CostCo cook book, and decided to try it more or less for fun. Well, it was a huge hit. Everyone from the kids to Grandma absolutely loved it. The following day, I found that someone was raiding the leftovers for a snack. And Ms. Cooking Dude dumped a bunch of the leftovers into a skillet for her breakfast the other morning. So yes, I suggest you try it.

Here's what you need for Easy Cheesy Potatoes:

    4 medium potatoes, unpeeled, cut into 1/2 inch chunks
    1/2 pound Velveeta cheese, cubed
    1/2 medium onion, chopped

    1/4 cup mayonnaise or Miracle Whip
    4 slices bacon, cooked, drained, and crumbled

If you have pre-cooked bacon, just chop it up. You can also now get crumbled pre-cooked bacon. But if you have to cook the bacon, it's worth it. To make it easy, just wrap it up in paper towels and nuke it for about a minute per slice.

Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray. (The photo shows a double batch made in a 9 x 13 dish.)

Mix everything together, put in the baking dish, and bake for 40-45 minutes. Get ready for the rave reviews.
